One-Bowl Banana Bread

Ingredients
- 3 super ripe bananas
- 3 eggs
- 1/2 cup packed brown sugar
- 1/3 cup unsweetened apple sauce (you can also use plain greek yogurt)
- 2 Tbsp vanilla paste/extract
- 1 1/2 cups flour (can mix in additional 1/4 if needed)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- Optional Mix-ins: nuts, cranberries, blueberries, chocolate chips, shredded zucchini, cinnamon sugar swirl, shredded coconut, raisins
Instructions
- Preheat Oven to 350 degrees.
- Peel bananas and place in large mixing bowl, use a fork to thoroughly smash until no large clumps remain.
- Add eggs to bowl and whisk fully into bananas.
- Dump the brown sugar, apple sauce and vanilla into bowl and whisk all ingredients together until fully incorporated.
- Measure out the flour and pour on top of banana mixture, then add baking powder, baking soda and salt on top of flour. Mix everything together until no dry bits remain. Don’t over mix!!
- If adding in mix-ins, mix into batter now.
- Pour into greased loaf pan and bake for 50-60 mins. until golden brown and toothpick comes out clean.
