This Fajita Chicken Bake is nothing short of a mouth watering flavor town of goodness. Mexican food is my love language and easy meals are a must. This meal is super easy to throw together. One of the things I love most is it is also easily customizable. I will list alternatives in the recipe box as well as several different ways this meal can be enjoyed.

- 5 boneless skinless chicken breast
- 1 red pepper
- 1 yellow pepper
- 1 orange pepper
- 1 medium onion
- 8 oz cream cheese softened
- 1 cup sour cream
- 3 cups shredded cheese combo of sharp cheddar and pepper jack
- 2 Tbsp cajun seasoning
- 2 Tbsp fresh crushed pepper
- 1 tsp sea salt
- 2 Tbsp taco seasoning (see notes below)
- 1 Tbsp Steak seasoning
- 1 tsp garlic powder
- 2 Tbsp unsalted butter
- EVOO
Instructions
- (You can cook the chicken many different ways for this recipe. For me, the easiest is to throw the frozen chicken breasts in the Pressure cooker/Insta Pot. If you want to saute or grill, that would work great too. Just cook and cube chicken)
- Place frozen chicken breasts in Pressure cooker. Drizzle EVOO on top along with half the quantity of seasonings. Set pressure cooker to 20 mins, with slow release. TIP: Dump all seasonings into a small saucer and mix together. Then just pour half of that mixture onto chicken. The rest is reserved for the peppers and onions.
- Preheat Oven to 350℉
- Put butter in a medium size skillet over medium heat.
- Add in sliced peppers and onions, saute until medium tender. Add the other half of seasoning into mixture while cooking.
- Add sour cream and cream cheese into saute pan and mix well.
- Once chicken is done, remove from pressure cooker and cube.
- Add chicken and pepper mixture into a 9×13 pan. Spread evenly.
- Top with cheese and Bake for 15-20 mins or until cheese is bubbly.
- I set the oven to broil for 3 minutes at end of baking to make the cheese a tiny bit crispy on the tops. It really adds a delicious texture.
- Optional for serving: We love to top it over rice. Add salsa, sour cream, or gaucamole. Sides: refried beans, chips & salsa or black beans

- 2 tablespoon chili powder
- 2 teaspoon onion powder
- 3 teaspoon dried oregano
- 1 teaspoon ground cumin
- 2 teaspoon garlic powder
- 2 teaspoon paprika
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper, adjust to preference
- 1/4 teaspoon pepper
- 1/4 teaspoon red pepper flakes
