This Fajita Chicken Bake is nothing short of a mouth watering flavor town of goodness. Mexican food is my love language and easy meals are a must. This meal is super easy to throw together. One of the things I love most is it is also easily customizable. I will list alternatives in the recipe box as well as several different ways this meal can be enjoyed.

This easy and delicious Mexican meal can be thrown together in less than an hour but tastes like you've been cooking all day!

Ingredients
  

  • 5 boneless skinless chicken breast
  • 1 red pepper
  • 1 yellow pepper
  • 1 orange pepper
  • 1 medium onion
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 3 cups shredded cheese combo of sharp cheddar and pepper jack
  • 2 Tbsp cajun seasoning
  • 2 Tbsp fresh crushed pepper
  • 1 tsp sea salt
  • 2 Tbsp taco seasoning (see notes below)
  • 1 Tbsp Steak seasoning
  • 1 tsp garlic powder
  • 2 Tbsp unsalted butter
  • EVOO

Instructions
 

  • (You can cook the chicken many different ways for this recipe. For me, the easiest is to throw the frozen chicken breasts in the Pressure cooker/Insta Pot. If you want to saute or grill, that would work great too. Just cook and cube chicken)
  • Place frozen chicken breasts in Pressure cooker. Drizzle EVOO on top along with half the quantity of seasonings. Set pressure cooker to 20 mins, with slow release.
    TIP: Dump all seasonings into a small saucer and mix together. Then just pour half of that mixture onto chicken. The rest is reserved for the peppers and onions.
  • Preheat Oven to 350℉
  • Put butter in a medium size skillet over medium heat.
  • Add in sliced peppers and onions, saute until medium tender. Add the other half of seasoning into mixture while cooking.
  • Add sour cream and cream cheese into saute pan and mix well.
  • Once chicken is done, remove from pressure cooker and cube.
  • Add chicken and pepper mixture into a 9×13 pan. Spread evenly.
  • Top with cheese and Bake for 15-20 mins or until cheese is bubbly.
  • I set the oven to broil for 3 minutes at end of baking to make the cheese a tiny bit crispy on the tops. It really adds a delicious texture.
  • Optional for serving: We love to top it over rice. Add salsa, sour cream, or gaucamole.
    Sides: refried beans, chips & salsa or black beans

Notes

Easy Homemade Taco Seasoning: 
  •   2 tablespoon chili powder
  •   2 teaspoon onion powder
  •   3 teaspoon dried oregano
  •   1 teaspoon ground cumin
  •   2 teaspoon garlic powder
  •   2 teaspoon paprika
  •   1 teaspoon salt
  •   1/4 teaspoon cayenne pepper, adjust to preference 
  •   1/4 teaspoon pepper
  •  1/4 teaspoon red pepper flakes
Mix all in an air tight container. Store and use for any recipe calling for seasoning!
